2019 Perez Cruz Ltd Ed Syrah
The grapes are harvested during the last week of April. Small lots of grapes are separated so that they are not unique to each plot. The grapes are selected and cleaned in the Mesanina, and then the stainless steel standards are opened by the gravitational method, where the son is ground and then a cold maceration of 4 days at 10C is observed. The extraction management uses careful pumping to obtain soft tannins during alcoholic fermentation. Finally, the total maceration period is 30 days. The malolactic fermentation takes place in French oak barrels.
A popular destination for both locals and tourists, the Maipo Valley is quite close to the city of Santiago. It’s divided further into into three sub-regions: Alto Maipo, Central Maipo and Pacific Maipo.
Each sub-region is known to produce wines of great quality (though often undervalued). Cabernet Sauvignon does exceedingly well in Alto Maipo and also holds the most acreage, while the rest of the region produces quality Merlot, Carménère and Syrah – in addition to smaller quantities of Pinot Noir, Cabernet Franc, Chardonnay, Sauvignon Blanc and Malbec.
